note: fresh and seasonal ingredients have the best flavours. generally use clean and dry ingredients.
First. lettuce and cabbage salad with other good things
ingredients: blue cheese, lettuce, fresh green cabbage, walnuts, rocca leaves, white radish sauce, fresh lemon, olive oil, salt1. slice the green cabbage and lettuce finely. i like structured chopping, so lettuce thinly width-wise, and the cabbage thinly along with the leave from top to bottom.
2. slice the pear very thinly lengthwise and marinate in lemon juice, salt and the white radish sauce for ten to 15 minutes and mix again3. mix the greens (lettuce, cabbage and rocca) in a large salad bowl
4. add the pears, corasely crushed walnuts and the blue cheese in small cubes
5. add the olive oil and mix well
Second. Salad of greens and mushroom
ingredients: fresh green lettuce (romaine lettuce), a couple of types of mushrooms (shitake and something else), mixed greens (the more the merrier), soy sauce, rice vinegar, seasame oil, labaneh (http://recipes.wikia.com/wiki/Labaneh), mustard, wasabi paste1. slice the mushrooms and stir-mix them in a hot pan with a little bit of soy sauce, when soft add the green leaves and immediately turn off the heat and cover for 5 minutes so the green leaves go a little soft but are uncooked. when done move to a large plate to cool.
2. slice the lettuce thinly width-wise and place in a large salad bowl
3. mix well: one small spoon of labaneh with one small spoon of mustard and a quarter spoon of wasabi, add a few drops of the sesame oil and some rice vinegar, and a little soy sauce
4. add the mushrooms and greens to the lettuce, add in the sauce and mix.
